Peanut Butter Cup Cookies

Yesterday I baked a batch of Peanut Butter Cup Cookies from the new cookbook my sister gave me for Christmas — Small Batch Cookies by Edd Kimber. I adore his books because they give you all the joy of baking without leaving you responsible for three dozen cookies afterward. These little beauties did not disappoint.

My husband is a devoted chocolate‑and‑peanut‑butter fan, so he immediately claimed the plate and took them to work to share (though he did so a bit grudgingly). They were that good.
