Edible Chocolate Chip Cookie Dough

I’m delivering on my promise for some true “no‑bake” bakes during the hottest stretch of summer. By now, it’s no secret that my palate often aligns with a child’s, and licking the spoon (and sometimes the bowl) is absolutely something I love. Cookie dough has never made it entirely into the oven in our house — there are days when I just want to stop mixing and enjoy the results rather than bake them.

One recipe I’ve been keeping under my hat for years is this Edible Chocolate Chip Cookie Dough. When my son was younger, the two of us set out to create the perfect version — something safe to eat, perfectly sweet, and satisfying without being too rich. After several attempts and lots of eaten cookie dough, we finally landed on the perfect batch. It’s smooth, scoopable, and exactly what you want when the craving hits.

But we didn’t stop there.

We’re both chocolate‑ice‑cream people (not vanilla!), and we’ve always felt the ice cream world has been getting it wrong. So we set out to fix it. We bought a carton of our favorite chocolate ice cream and let it soften just enough to stir. While it softened, we rolled tons of tiny cookie‑dough balls. When the ice cream reached that perfect “stir‑able” stage, we transferred it to a big bowl, folded in the cookie‑dough balls, repacked the carton, and froze it again.

The result? Chocolate Chocolate Chip Cookie Dough Ice Cream — a family favorite we still enjoy to this day.

My husband loves making homemade ice cream, so every now and then we even churn our own chocolate base and add the cookie dough before freezing. It’s the perfect summer treat: cookies you don’t have to bake, a bowl of ice cream, and a whole lot of joy.

And here’s a little bonus: This cookie dough makes a wonderful gift for that special someone with a sweet tooth. Spoon it into small canning jars, freeze them, and you’ll have ready‑to‑gift treats for birthdays, thank‑yous, or just‑because surprises. It’s a make‑ahead delight that freezes beautifully and brings a smile every time.

That’s today’s bake from The Quilted Bakery. May your treats rise beautifully, your seams stay straight, and your days be sprinkled with sweetness. And if you whip up a batch, I’d love to see it — share your bakes on Facebook with #thequiltedbakery.
