Honey Roasted Apricot Galette with Almond Crust

If you don’t love the fussiness of making pies or dealing with pastry, might I suggest making a Galette? When it comes to pastry, it’s the perfect place to start — designed to be unfussy, beautifully imperfect, and far easier to make than traditional pies or tarts. And in the heat and humidity of summer, a galette is wonderfully forgiving. No crimping, no lattice work, no stress. Just fold, bake, and enjoy.

And if pastry isn’t something you want to mess with at all, store‑bought pie crust works beautifully. You still get all the charm of a rustic summer dessert without any of the extra effort. It’s one of my favorite ways to enjoy seasonal fruit, especially apricots.

Oddly enough, I don’t believe I ever ate an apricot growing up. They weren’t part of our fruit bowl rotation, and I don’t remember seeing them much at the store. But a few years ago, they showed up dried on a charcuterie board at a winery, and I’ve been in love ever since. Fresh apricots are even better — tender, fragrant, and so easy to work with.
